This is a long-standing favourite recipe for a complete Mexican meal. It features a savoury filling of ground beef, onion, and green pepper seasoned with chilli powder and Worcestershire sauce, all wrapped in flour tortillas. The burritos are nestled in a base of spiced stewed tomatoes, topped with more tomatoes and cheddar cheese, then baked until hot and bubbling. It's a satisfying dish that serves four to six people and is ready in about 45 minutes.

Spicy Beef Burritos

Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, thinly sliced
  • 1 medium green pepper, cut into thin strips
  • 1 tablespoon chili powder
  • 1 tablespoon Worcestershire sauce
  • 8 flour tortillas (6-inch-8-inch )
  • 1 (28 ounce) can spiced stewed Mexican tomatoes (Del-Monte brand)
  • 1 cup cheddar cheese, shredded

Method

  1. Cook the ground beef, sliced onion, and green pepper strips in a skillet for 5 minutes.
  2. Add the chilli powder and Worcestershire sauce to the skillet and mix well.
  3. Place a portion of the beef mixture into the middle of each tortilla, then fold the sides over and roll up to create a parcel.
  4. Spread a thin layer of the spiced tomatoes over the base of a 9" x 13" pan that has been prepared with cooking spray.
  5. Arrange the filled tortillas in the baking dish with the seam side facing down.
  6. Cover the tortillas with the rest of the tomatoes and scatter the shredded cheese on top.
  7. Bake at 350°F for 30 minutes, or until the contents are bubbling.
  8. If you like, you can add shredded lettuce, sour cream, chopped green onions, or sliced olives when serving.
