Spicy Beef and Asparagus Stir Fry
This straightforward stir fry combines tender strips of beef with fresh asparagus, red pepper, and onion. The dish comes together in a single wok or skillet, coated in a simple sauce made from beef broth, soy sauce, and ketchup. It's a speedy and satisfying meal that utilises common pantry staples for a convenient dinner option.
Ingredients
- 1 lb beef top round steak, trimmed
- 1 tablespoon cornstarch
- 1 tablespoon water
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup beef broth
- 1 tablespoon soy sauce
- 1 tablespoon ketchup
- 2 tablespoons vegetable oil, divided
- 1 garlic clove
- 12 ounces asparagus, trimmed, cut into 1 inch pieces (or use 10 oz frozen asparagus.)
- 1 small red pepper, cut into thin strips
- 1 small onion, cut into small wedges
Method
- Place the steak in the freezer until it becomes partially firm, then slice it into thin strips.
- In a large bowl, whisk together the cornstarch, water, salt, and pepper. Add the beef strips and toss until they are evenly coated.
- Prepare the sauce by combining the beef broth, soy sauce, and ketchup in a separate small bowl. Set this mixture aside.
- Heat a wok or large skillet until it is very hot. Pour in 1 tablespoon of the vegetable oil and add the garlic, stir frying for 20 seconds. Add half of the coated beef and stir fry until browned, then remove it with a slotted spoon. Repeat with the remaining beef. Add the rest of the oil to the wok.
- Add the asparagus pieces to the wok and stir fry for two minutes. Next, add the red pepper strips and onion wedges, cooking for a further two minutes.
- Return all the cooked beef to the wok. Pour in the reserved broth mixture and cook, stirring constantly, until the sauce becomes bubbly. Cover the wok and cook for one minute longer.
