Spicy Bean and Avocado Tostados

Ingredients

  • 4 flour tortillas
  • 400g can refried beans
  • big pinch cayenne pepper
  • 200g can kidney beans in water, rinsed
  • 2 handfuls cherry tomatoes quartered
  • 50g cheddar
  • 1 green chilli thinly sliced
  • 1 avocado halved, stoned and sliced
  • handful coriander leaves, to serve

Method

  1. 1. Set your grill to medium-high. Place two of the flour tortillas on a large baking sheet and grill them for 2 mins. 2. Combine the refried beans, cayenne pepper, rinsed kidney beans and quartered cherry tomatoes in a bowl. Spread half of this mixture onto the two grilled tortillas. 3. Sprinkle half of the grated cheddar and half of the thinly sliced green chilli over the bean layer. Return the baking sheet to the grill and cook until the cheese has melted. 4. Transfer the prepared tostados to serving plates and finish by topping them with half of the sliced avocado and a scattering of coriander leaves. 5. Repeat the entire process using the remaining two tortillas and the rest of the fillings.
