After marinating for at least one hour, they are threaded onto skewers and grilled for just a few minutes per side until pink and lightly charred. Spicy Barbecued Shrimp Skewers

Ingredients

  • 1/4 cup olive oil or 1/4 cup vegetable oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh thyme
  • 1 tablespoon minced Italian parsley
  • 1 large fresh jalapeno, seeded and minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon light brown sugar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon red pepper flakes
  • 1 lime, juice of
  • 2 lbs large shrimp, peeled
  • 8 bamboo skewers

Method

  1. Prepare the shrimp by peeling them and setting them aside.
  2. Mix the olive oil, garlic, thyme, parsley, jalapeno, paprika, salt, brown sugar, cumin, Worcestershire sauce, cayenne pepper, red pepper flakes and lime juice together in a bowl.
  3. Place the peeled shrimp into the marinade and toss until they are fully coated.
  4. Allow the shrimp to marinate for at least one hour.
  5. Begin preheating your gas grill for 30 minutes.
  6. As the grill heats, thread approximately 10 shrimp onto each bamboo skewer.
  7. Grill the skewers for about 3 minutes on each side, until the shrimp turn pink and have a light char, taking care not to overcook them.
  8. Take the skewers off the grill and serve immediately.
