Spicy Banana Bread
This banana bread offers a deliciously spiced alternative to the traditional version. The recipe yields two loaves, combining ripe bananas with cinnamon, cloves, and nutmeg for a warm, aromatic flavour. Chopped walnuts or pecans add a satisfying crunch to the moist, tender crumb. Ingredients
- 1 cup shortening
- 2 cups white sugar
- 6 ripe bananas, mashed
- 4 eggs
- 2 1/4 cups flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 1 -2 teaspoon cinnamon
- 1/2-1 teaspoon ground cloves
- 1/2-1 teaspoon nutmeg
- 1 cup chopped walnuts or 1 cup pecans
Method
- Heat your oven to 350 degrees.
- Prepare two 9x5 loaf tins by spraying them with non-stick cooking spray.
- Cream together the shortening and white sugar until the mixture is light.
- Incorporate the eggs, beating them in one after the other.
- In a different bowl, sift the flour with the salt, baking soda, cinnamon, cloves and nutmeg.
- Combine the sifted dry ingredients with the creamed shortening mixture.
- Mix everything together thoroughly.
- Stir in the well mashed bananas until fully blended.
- Fold the chopped nuts into the batter.
- Divide the batter evenly between the two prepared loaf pans.
- Bake the loaves for 45 minutes to 1 hour.
- Check for doneness by inserting a wooden toothpick into the centre.
