Spicy Banana Bread

Ingredients

  • 1 cup shortening
  • 2 cups white sugar
  • 6 ripe bananas, mashed
  • 4 eggs
  • 2 1/4 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 -2 teaspoon cinnamon
  • 1/2-1 teaspoon ground cloves
  • 1/2-1 teaspoon nutmeg
  • 1 cup chopped walnuts or 1 cup pecans

Method

  1. Heat your oven to 350 degrees.
  2. Prepare two 9x5 loaf tins by spraying them with non-stick cooking spray.
  3. Cream together the shortening and white sugar until the mixture is light.
  4. Incorporate the eggs, beating them in one after the other.
  5. In a different bowl, sift the flour with the salt, baking soda, cinnamon, cloves and nutmeg.
  6. Combine the sifted dry ingredients with the creamed shortening mixture.
  7. Mix everything together thoroughly.
  8. Stir in the well mashed bananas until fully blended.
  9. Fold the chopped nuts into the batter.
  10. Divide the batter evenly between the two prepared loaf pans.
  11. Bake the loaves for 45 minutes to 1 hour.
  12. Check for doneness by inserting a wooden toothpick into the centre.
