This recipe is the result of careful experimentation to create a deliciously savoury meatloaf with a hint of spice. It offers a bolder take on a classic comfort food, using ingredients like Old Bay seasoning and optional cayenne and jalapeño. The loaf is glazed with barbecue sauce and cheese before baking. Spicy Baltimore Meatloaf

Ingredients

  • 2 lbs ground beef
  • 1 1/2 ounces bacon bits (about 1/2 a jar of store bought real bacon bits)
  • 1 egg (large)
  • 1/2 cup breadcrumbs (I used Italian seasoned bread crumbs)
  • 1 tablespoon cayenne pepper (optional)
  • 1 tablespoon Old Bay Seasoning
  • 1/2 cup barbecue sauce (use your favorite)
  • 1 teaspoon garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon sage (ground)
  • 1 jalapeno pepper (chopped) (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 tablespoons Worcestershire sauce
  • 4 tablespoons parmesan cheese or 4 tablespoons romano cheese, grated

Method

  1. Set your oven to heat to 350 degrees.
  2. In a large bowl, mix all the listed ingredients together, but set aside 1/4 cup of the barbecue sauce and the grated cheese.
  3. Use your hands to knead the meat mixture thoroughly for approximately five minutes.
  4. Prepare a baking pan by greasing it or applying cooking spray.
  5. Transfer the meat mixture to the pan and shape it into a loaf.
  6. Spread the reserved barbecue sauce over the top of the loaf, then sprinkle on the grated cheese.
  7. Bake the meatloaf in the 350 degree oven for 45 minutes.
  8. When the meatloaf is done, reaching an internal temperature of about 150 degrees for medium or about 180 for well done, take it out and allow it to rest for ten minutes.
  9. Cut the loaf into slices roughly 3/4" thick and serve with extra barbecue sauce or ketchup.
