Spicy Baked Zucchini Sticks

Ingredients

  • 3 large zucchini
  • 1 egg white, beaten
  • 1/3 cup baking powder
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • Pam cooking spray

Method

  1. Preheat the oven to 450 degrees Farenheit.
  2. Halve each zucchini and slice them into sticks roughly 4 inches long.
  3. Beat the egg white in a bowl.
  4. Toss the zucchini sticks in the beaten egg white to coat.
  5. Combine the baking powder, garlic powder, salt, black pepper, and cayenne pepper in a plastic zip-lock bag.
  6. Add the coated zucchini sticks to the bag and shake until they are fully covered in the spice mix.
  7. Set a wire rack over a baking pan and spray it with Pam cooking spray.
  8. Arrange the coated sticks on the prepared rack and bake for 20-25 minutes, until they are light golden and cooked through.
