Spicy Baked Zucchini Sticks
These baked zucchini sticks offer a satisfying crunch without the carbs of traditional fries. Zucchini is cut into sticks, coated in beaten egg white and a seasoned mixture of baking powder and spices, then baked on a wire rack until crisp and golden. They are ideal for serving with your favourite dipping sauces. The recipe yields 3-4 servings and takes about 35 minutes to prepare and cook.
Ingredients
- 3 large zucchini
- 1 egg white, beaten
- 1/3 cup baking powder
- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- Pam cooking spray
Method
- Preheat the oven to 450 degrees Farenheit.
- Halve each zucchini and slice them into sticks roughly 4 inches long.
- Beat the egg white in a bowl.
- Toss the zucchini sticks in the beaten egg white to coat.
- Combine the baking powder, garlic powder, salt, black pepper, and cayenne pepper in a plastic zip-lock bag.
- Add the coated zucchini sticks to the bag and shake until they are fully covered in the spice mix.
- Set a wire rack over a baking pan and spray it with Pam cooking spray.
- Arrange the coated sticks on the prepared rack and bake for 20-25 minutes, until they are light golden and cooked through.
- For dipping, allow the sticks to cool for 3 minutes before serving with ketchup, blue cheese, or your preferred condiment.
