Spicy Baked Tofu and Spinach Wrap
This American lunch wrap features extra-firm tofu cubes marinated in a tangy Buffalo wing sauce and baked until perfectly firm. The warm, spicy tofu is then combined with fresh spinach, melted Swiss cheese, and sliced Campari tomatoes on a honey-wheat tortilla. It's a simple, flavourful meal that comes together in about 30 minutes, yielding four satisfying wraps.
Ingredients
- cooking spray
- 1 (12 fluid ounce) bottle Buffalo wing sauce (such as Frank's®), or to taste
- 1 (12 ounce) package extra-firm tofu, cut into cubes
- 4 slices Swiss cheese
- 4 honey-wheat tortillas
- 5 Campari tomatoes, sliced
- 1 cup fresh spinach, or to taste
Method
- Set your oven to 400 degrees F (200 degrees C) and lightly coat a baking sheet with cooking spray.
- Place the tofu cubes in a large bowl and pour over enough Buffalo wing sauce to cover them completely, tossing gently to ensure an even coating. Allow the tofu to marinate while the oven heats up.
- Transfer the marinated tofu to the prepared baking sheet, arranging the cubes in a single layer. Spoon a little extra sauce over the top and give them a light spray with cooking spray.
- Bake the tofu in the preheated oven for 10 minutes. Turn the cubes over, spray the tops once more with cooking spray, and return to the oven to bake until firm, about 10 minutes more.
- Lay a slice of Swiss cheese on each honey-wheat tortilla. Warm them in the microwave for about 30 seconds to melt the cheese.
- Distribute the tomato slices between the tortillas. Top each with roughly a quarter of the baked tofu and a quarter of the fresh spinach. Fold the tortillas around the fillings to create wraps.
