Spicy Baked Soy Bean Snack
This recipe creates a tasty and protein-rich snack, offering a more flavourful option than standard crisps. It involves boiling frozen soy beans before coating them in a spicy seasoning blend. The beans are then baked until crisp. Be aware that the result is quite hot. The process takes about 70 minutes in total.
Ingredients
- 1 (500 g) package soybeans, Frozen Shelled
- 3 cups water
- 1 tablespoon olive oil
- 1/4 tablespoon dried chipotle powder
- 1/4 tablespoon coriander
- 1/4 tablespoon chili pepper flakes
- 1 tablespoon Dijon mustard
Method
- Set your oven to heat to 350 degrees F.
- Place the water in a pan and bring it to a rolling boil.
- Tip the frozen soy beans into the boiling water, lower the heat to medium low, put a lid on the pan, and let them simmer for 4 minutes.
- Pour away the water, keeping the cooked soy beans in the pot.
- Pour in the olive oil and add the chipotle pepper, coriander, chili flakes, and dijon mustard, then stir everything together thoroughly.
- Lightly grease a baking sheet and arrange the coated soy beans in a single, even layer.
- Place the tray in the oven and bake for approx 1 hour.
