Spicy Baked Soy Bean Snack

Ingredients

  • 1 (500 g) package soybeans, Frozen Shelled
  • 3 cups water
  • 1 tablespoon olive oil
  • 1/4 tablespoon dried chipotle powder
  • 1/4 tablespoon coriander
  • 1/4 tablespoon chili pepper flakes
  • 1 tablespoon Dijon mustard

Method

  1. Set your oven to heat to 350 degrees F.
  2. Place the water in a pan and bring it to a rolling boil.
  3. Tip the frozen soy beans into the boiling water, lower the heat to medium low, put a lid on the pan, and let them simmer for 4 minutes.
  4. Pour away the water, keeping the cooked soy beans in the pot.
  5. Pour in the olive oil and add the chipotle pepper, coriander, chili flakes, and dijon mustard, then stir everything together thoroughly.
  6. Lightly grease a baking sheet and arrange the coated soy beans in a single, even layer.
  7. Place the tray in the oven and bake for approx 1 hour.
