This is a favourite baked shrimp dish, marinated in a blend of olive oil, Cajun seasoning, lemon juice, and honey. The shrimp are left to soak up the flavours before being baked until tender. Spicy Baked Shrimp

Ingredients

  • 1/2 cup olive oil
  • 2 tablespoons cajun seasoning or 2 tablespoons creole seasoning
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons freshly chopped parsley
  • 1 tablespoon honey
  • 1 tablespoon soy sauce (depending on what seasoning you use, you may omit the soy sauce or use low sodium)
  • 1 pinch cayenne pepper
  • 1 lb uncooked large shrimp, shelled and deveined
  • lemon wedge (to garnish)
  • French bread

Method

  1. Mix the olive oil, Cajun seasoning, lemon juice, parsley, honey, soy sauce, and cayenne pepper together in a 9x13 inch baking dish.
  2. Place the prepared shrimp into the dish and toss them thoroughly in the marinade.
  3. Cover the dish and place it in the refrigerator to marinate for about an hour.
  4. Heat your oven to 450 degrees.
  5. Bake the shrimp, giving them a stir now and then, until they are fully cooked, which should take about 10 minutes.
  6. Add lemon wedges for garnish and present the shrimp with a loaf of French bread on the side.
