Spicy Baked Picnic Chicken
This American dish is a great choice for lunch or dinner, serving four people. Chicken breasts are coated in a flavourful, spicy buttermilk marinade and a seasoned breadcrumb and Parmesan crust. They are then oven-baked until perfectly cooked and crispy. The entire process takes about 45 minutes to complete, resulting in a delicious and convenient meal ideal for packing up and taking on a picnic.
Ingredients
- cooking spray
- 1 cup buttermilk
- 1 (1.25 ounce) package taco seasoning mix, divided
- 0.125 teaspoon cayenne pepper
- 1 cup bread crumbs
- 1 cup grated Parmesan cheese
- 0.25 cup all-purpose flour
- 0.5 teaspoon onion powder
- 0.5 teaspoon salt
- 0.25 teaspoon ground black pepper
- 4 skinless, boneless chicken breast halves
Method
- Set your oven to 375 degrees F (190 degrees C). Prepare a broiler pan by spraying it with cooking spray.
- In a bowl, combine the buttermilk with 1 teaspoon of the taco seasoning and the cayenne pepper.
- Take a separate bowl and mix the rest of the taco seasoning with the bread crumbs, Parmesan cheese, flour, onion powder, salt, and black pepper.
- Submerge each chicken breast in the buttermilk mixture, then firmly press it into the dry breadcrumb blend to coat it fully. Transfer the coated chicken to the prepared broiler pan.
- Place the pan in the oven and bake for 30 to 35 minutes. The chicken is done when it is no longer pink inside and the exterior is crisp. The internal temperature should reach at least 165 degrees F (74 degrees C).
