This recipe transforms extra-firm tofu into a delicious main course. The key is a savoury marinade made from peanut butter, ketchup, rice vinegar, soy sauce, and aromatic spices including garlic, ginger, and cayenne pepper. After marinating for at least 30 minutes, the tofu cubes are baked in a single layer until they achieve a pleasing, slightly browned texture. The entire process takes about 50 minutes and yields six satisfying servings.

Spicy Baked Marinated Tofu

Ingredients

  • 2 tablespoons rice vinegar
  • 2 tablespoons ketchup
  • 2 tablespoons peanut butter
  • 1 teaspoon low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon cayenne pepper, or to taste
  • fresh ground black pepper
  • 1 (16 ounce) package extra-firm tofu, cut into 1/2-inch cubes

Method

  1. Combine the rice vinegar, ketchup, peanut butter, soy sauce, sesame oil, minced garlic, ground ginger, cayenne pepper, and black pepper in a small bowl that is safe for the microwave.
  2. Place the bowl with the vinegar mixture in the microwave and heat it for 10 to 15 seconds to soften the peanut butter, then stir everything until it is smooth.
  3. Transfer the cubed tofu to a large bowl. Pour the prepared sauce over the tofu and mix well to coat all pieces. Cover the bowl using plastic wrap and place it in the refrigerator for at least 30 minutes or up to a full day, stirring now and then to keep the tofu covered in marinade.
  4. Turn on your oven and set it to 400 degrees F (200 degrees C) to preheat.
  5. Arrange the marinated tofu pieces in one layer on a baking sheet.
  6. Place the baking sheet in the preheated oven and bake the tofu for 10 to 15 minutes until the cubes are slightly browned.
