Spicy Baked Chicken Wraps
These wraps are an ideal choice for a simple and speedy dinner. They combine cooked chicken with a creamy, spicy filling, all rolled in tortillas and baked with extra salsa and cheese. The result is a comforting, golden dish that makes excellent use of leftover chicken. It is a convenient one dish meal that serves four people.
Ingredients
- 3 cups cooked chicken
- 1 (10 ounce) can low-fat cream of chicken soup
- 1/2 cup fat free sour cream
- 1 cup salsa
- 1 teaspoon hot sauce
- 2 thinly sliced green onions
- 8 flour tortillas (I like using jalapeno cheddar)
- 1 1/2 cups of grated sharp cheddar cheese
Method
- Heat your oven to 350F (180C).
- Pour 1/2 cup of salsa into a 9X13 inch baking dish and spread it out.
- Combine the undiluted soup, sour cream and hot sauce by whisking them together.
- Mix in the sliced green onions, cooked chicken and 1/2 cup of the grated cheese.
- Distribute this filling equally between the eight flour tortillas and roll each one up like a burrito.
- Arrange all the filled wraps in the prepared dish with the seam sides facing down.
- Top the wraps with the rest of the salsa and scatter over the remaining cheese.
- Bake without a cover for 30-35 minutes, until the cheese has turned a golden colour.
- Serve the wraps while they are hot.
