Spicy Baked Chicken Pierre

This simple baked chicken dish is perfect for a busy cook. It requires minimal preparation and cooks unattended in the oven. Chicken thighs are layered with onions, fresh tomatoes, garlic, and roasted pasilla chilli, then baked until tender. The result is a juicy, flavourful meal that is traditionally served over a bed of rice cooked in chicken stock for extra savouriness.

Spicy Baked Chicken Pierre

Ingredients

  • 1 medium yellow onions or 1 medium sweet onion, thinly sliced,broken into rings
  • 4 boneless skinless chicken thighs, and defatted
  • 8 small fresh tomatoes, sliced
  • 3 cloves garlic, minced
  • 1 fresh pasilla chile, roasted,skinned,seeded,and chopped
  • 1/4 teaspoon salt
  • fresh ground black pepper, to taste
  • basmati rice or jasmine rice, cooked in
  • chicken stock

Method

  1. Set your oven to heat to 350°F.
  2. Lightly coat the base of a small casserole dish with cooking spray and arrange the onion rings to cover it.
  3. Lay the prepared chicken thighs on top of the onion layer.
  4. Arrange the sliced tomatoes over the chicken to cover it.
  5. Scatter the minced garlic and chopped chilli over the tomatoes, then season with the salt and black pepper.
  6. Place the dish in the oven and bake without a cover for 35 minutes.
  7. Serve the baked chicken and vegetables on a bed of cooked rice.
