Spicy Baked Beans
This robust baked bean dish is based on a competition-winning recipe. It combines pork sausage with a medley of canned beans in a sweet and tangy sauce flavoured with barbecue sauce, brown sugar, mustard, and spices. The mixture is baked until thick and bubbling, creating a substantial side perfect for gatherings. The recipe yields a generous amount, suitable for a crowd.
Ingredients
- 1 lb jimmy dean ground pork sausage
- 1 onion, chopped
- 2 (28 ounce) cans bold-and-spicy baked beans
- 1 (15 ounce) can black beans, drained or 1 (15 ounce) can lima beans
- 1 (15 ounce) can light kidney beans or 1 (15 ounce) can dark red kidney beans, drained
- 3 cups bottled barbecue sauce
- 1/4-1/2 cup firmly packed dark brown sugar (1/2 cup is on the sweet side)
- 1/4 cup yellow mustard
- fresh lemon juice, 1 squirt (optional but very good)
- 1 teaspoon black pepper
- 1/2 teaspoon ground red pepper
- 1 teaspoon garlic powder
Method
- Place the pork sausage in an ovenproof Dutch oven and cook, breaking it up with a spoon, until it is crumbled and fully cooked. Drain the fat, keeping two teaspoons of the drippings in the pot. Return the cooked sausage to the Dutch oven.
- Add the chopped onion to the sausage and cook together until the onion has softened.
- Introduce all the remaining ingredients to the Dutch oven and stir thoroughly to combine everything.
- Place the Dutch oven in a preheated oven and bake at 350° for 45 minutes, or until the mixture is bubbly and has thickened to your liking.
