This appetiser elevates the classic pairing of bacon and scallops with a spicy Cajun seasoning. The bacon is first partially cooked to render fat, then wrapped around plump sea scallops and secured. Spicy Bacon-Wrapped Scallops

Ingredients

  • 10 slices bacon
  • 10 sea scallops
  • 1 teaspoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 lemon, cut into wedges

Method

  1. Place the bacon in a large skillet and cook it, turning now and then, until it is lightly browned yet still flexible, for about 5 minutes. Transfer the bacon to paper towels to drain.
  2. Take one slice of bacon and wrap it around a single sea scallop, using a toothpick to hold it in place. Sprinkle the Cajun seasoning over the wrapped scallops.
  3. Add olive oil to a fresh skillet and place it over medium-high heat. Cook the scallops until they develop a golden colour and the bacon becomes crisp, which takes 3 to 4 minutes per side. Finish by squeezing lemon juice over them before serving straight away.
