Spicy Bacon Wrapped Pineapple
This appetiser offers a spicier version of the classic bacon-wrapped pineapple. Fresh pineapple is ideal, but canned chunks work perfectly. The key is to soak your toothpicks first. Each pineapple piece gets wrapped in bacon, secured, and then coated in a simple sauce made from brown sugar, mayonnaise, and chilli sauce. They are then baked until the bacon crisps and the sauce becomes deliciously bubbly. Perfect for serving warm to a group.
Ingredients
- 1/2 lb sliced bacon, cut into thirds
- 1 (20 ounce) can pineapple chunks in juice, drained
- 1/2 cup packed brown sugar
- 1/2 cup mayonnaise
- 1/4 cup chili sauce
Method
- Set your oven to heat to 350 degrees.
- Take a piece of bacon and wrap it around a pineapple chunk, securing it with a toothpick.
- Arrange the wrapped pieces in a shallow baking dish.
- Combine the brown sugar, mayonnaise and chilli sauce in a small bowl, then pour this mixture over the pineapple.
- Bake without a cover for 25 minutes, until the bacon edges are crisp and the sauce is bubbling.
- Enjoy these while they are still warm.
