These American-style baby back ribs are marinated in a rich, spicy sauce made with chipotle peppers, brown sugar, and pop. Spicy Baby Back Ribs

Ingredients

  • 2 cans pop, such as Dr. Pepper
  • 2 cups barbecue sauce
  • 2 cups brown sugar
  • Two 5-ounce cans chipotle peppers in adobo
  • 2/3 cup brown mustard
  • 2 tablespoons white vinegar
  • 6 cloves garlic, minced
  • 6 racks pork baby back ribs

Method

  1. Combine the pop, barbecue sauce, brown sugar, chipotles, mustard, vinegar and garlic in a medium saucepan. Bring the mixture to a gentle boil and let it cook until thickened, which should take about 20 minutes. Once done, let it cool fully. Separate the sauce into two containers and place one in the fridge for use later.
  2. Use the other container of marinade to coat the ribs thoroughly on all sides. Individually wrap each rack of ribs in foil and refrigerate them to marinate for 8 hours.
  3. Preheat your oven to 135°C when you are ready to begin cooking the ribs.
  4. Arrange the foil-wrapped ribs on baking sheets and cook them for 2 hours. Then, raise the oven temperature to 150°C. Unwrap the foil packets and brush a generous amount of the reserved marinade over the ribs. Place them back in the oven with the foil open and cook for a further 30 to 40 minutes, applying more marinade during this time.
  5. Take the ribs out of the oven once they become fork-tender, continuing to cook if needed. Slice the racks and serve immediately.
