These vegetarian wraps are a speedy meal, ready in just 13 minutes. Sliced chicken-style pieces are marinated with lime, chilli and garlic, then pan-fried. They are piled onto seeded tortillas with creamy avocado and warmed roasted red peppers, finished with fresh coriander. Perfect for a casual lunch or a light supper, they are designed to be eaten with your fingers.

Spicy Avocado Wraps

Ingredients

  • 0.5 x 300g pack mycoprotein chicken-style pieces (or similar vegetarian product), sliced at an angle
  • generous squeeze juice 0.5 lime
  • 1/2 tsp mild chilli powder
  • 1 garlic clove chopped
  • 1 tsp olive oil
  • 2 seeded wraps
  • 1 avocado halved and stoned
  • 1 roasted red pepper from a jar
  • few sprigs coriander chopped

Method

  1. Combine the sliced vegetarian chicken-style pieces with the lime juice, half a teaspoon of mild chilli powder and the chopped garlic clove.
  2. Warm one teaspoon of olive oil in a non-stick frying pan and cook the pieces for a couple of mins. Meanwhile, heat the two seeded wraps as per the pack or char them briefly over a gas flame, ensuring they stay pliable for rolling.
  3. Spread half an avocado onto each wrap. Add the jarred roasted red pepper to the pan to heat through, then layer the peppers and cooked pieces onto the wraps. Scatter over the chopped coriander, roll them up, slice each in half and enjoy.
