Spicy Avocado and Grape Tomato Salad

Ingredients

  • 2 avocados, cubed
  • 2 pints grape tomatoes, halved
  • 1 red bell pepper, chopped finely
  • 1 chipotle chile in adobo
  • 1/2 cup chopped cilantro
  • 1/2 red onion, sliced thinly
  • 2 garlic cloves
  • 2 limes, juice of
  • 1 teaspoon lime zest
  • 1 tablespoon honey or 1 tablespoon agave nectar
  • 1/2 teaspoon cumin
  • red wine vinegar, splash of (optional)
  • Worcestershire sauce, spash of (optional)
  • cayenne pepper (optional)
  • salt and pepper

Method

  1. Place the halved tomatoes, finely chopped bell pepper, thinly sliced onion, chopped cilantro, and lime zest into a large bowl and mix them together.
  2. Blend the chipotle chile, garlic cloves, juice from one lime, agave nectar, cumin, optional red wine vinegar, optional Worcestershire sauce, optional cayenne pepper, and salt in a food processor or blender. Pour this dressing over the vegetable mixture, season with salt and pepper, then cover and refrigerate for an hour.
  3. Cube the avocados and coat them with the juice from the second lime. Carefully fold the avocado into the chilled salad. Adjust the seasoning with extra cayenne, salt, and pepper if desired. Note that the avocado may discolour slightly after a day, but the taste will continue to develop as it marinates.
