Spicy Asparagus and Chorizo Baked Egg
This is a fast and satisfying one-pan dish, ideal for a solo dinner. It combines asparagus and diced chorizo, fried with hot smoked paprika, then mixed with wilted spinach and crème fraîche. An egg is cracked into the centre and baked until set, creating a complete meal that can be served with flatbread. The entire process takes just 25 minutes from start to finish.
Ingredients
- 125g asparagus cut into 3cm pieces
- 20g diced chorizo
- 1/2 tsp hot smoked paprika
- 75g frozen spinach
- 1 tbsp half-fat crème fraîche
- 1 large egg
- flatbread to serve (optional)
Method
- Place a small non-stick frying pan on the heat and add the asparagus pieces and diced chorizo. Fry these for 8 mins. Mix in the hot smoked paprika and continue to cook for 1 min more.
- Add the frozen spinach to the pan and cook for 5 mins until it has wilted. Stir through the half-fat crème fraîche and season. Create a hollow in the centre of the mixture and crack the large egg into it. Cover the pan and cook for 5-6 mins until the egg is just set. Serve with flatbread if desired.
