Spicy Asian Style Pasta Salad
This vibrant pasta salad combines linguine with a sweet and spicy dressing of sesame oil, honey, soy sauce and balsamic vinegar. Crisp red peppers, snow peas and red onion are lightly sauteed before being tossed with the pasta, along with honey roasted peanuts and fresh basil. It can be served as a standalone side dish or with added protein for a main course. The recipe takes 45 minutes to prepare and serves six people.
Ingredients
- 1 lb linguine, broken in half
- 4 tablespoons oriental sesame oil
- 3 tablespoons honey
- 3 tablespoons soy sauce
- 3 tablespoons balsamic vinegar
- 1/4 teaspoon ground cayenne pepper
- salt
- 3 red bell peppers, seeded and thinly sliced
- 3 cups snow peas
- 1 large red onion, thinly sliced
- 3/4 cup honey roasted peanuts, coarsely chopped
- 1/2 cup chopped fresh basil
Method
- Boil the linguine in a large pot of salted water until it is tender but retains a firm bite.
- Once cooked, drain the pasta thoroughly and place it into a large mixing bowl.
- In a separate small bowl, whisk together three tablespoons of sesame oil with the honey, soy sauce, balsamic vinegar and ground cayenne pepper.
- Add salt to the dressing, then combine half of it with the drained pasta.
- Warm the remaining one tablespoon of sesame oil in a large, heavy pot.
- Cook the sliced bell peppers, snow peas and red onion for about 2 minutes, just until they start to soften.
- Transfer the cooked vegetables to the bowl containing the pasta.
- Stir in the chopped peanuts and fresh basil, adding more of the dressing until everything is well coated.
- Reserve any leftover dressing to serve on the side.
