Spicy Asian-Inspired Chicken Wings

Ingredients

  • 0.25 cup Asian chile paste (such as sambal oelek)
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 teaspoons chopped garlic
  • 1 teaspoon grated fresh ginger
  • 1 lime, juiced
  • 2.5 pounds jumbo chicken wings, tips removed

Method

  1. Combine the chile paste, fish sauce, soy sauce, garlic, ginger, and lime juice in a bowl, whisking them together. Transfer this mixture to a resealable plastic bag, add the chicken wings, and ensure they are fully coated. Press out any extra air, seal the bag, and place it in the refrigerator to marinate for 3 hours, turning the bag occasionally.
  2. Prepare your outdoor grill by preheating it and lightly oiling the cooking grate. Take the chicken wings from the marinade, allowing any excess to drip off, and dispose of the leftover marinade.
  3. Place the wings on the hot grill and cook them, turning as needed, until they are fully cooked with no pink remaining near the bone and the juices run clear, which should take 12 to 14 minutes.
