Spicy Asian Broccoli
This dish features broccoli cut into long spears and tossed with a savoury blend of chilli-garlic sauce, sesame oil, sugar and fresh garlic. The coated spears are roasted on a single layer until they develop darkened, crisp edges. It serves as a vibrant accompaniment to rice or stir-fried proteins. The recipe yields four portions and takes approximately 25 minutes from start to finish.
Ingredients
- 4 broccoli florets
- 2 1/2 tablespoons canola oil (I use olive oil)
- 2 tablespoons sriracha sauce (or Sambal Oelek or Chinese chili-Garlic sauce)
- 2 teaspoons toasted sesame oil
- 2 teaspoons raw sugar (or light brown sugar)
- 2 -3 garlic cloves, peeled and minced
- salt, to taste
Method
- Set your oven to heat to 425°F. Prepare a large, rimmed baking sheet by lightly spraying it with non-stick cooking spray, or use a stoneware pan without spray, and set it aside.
- Combine the canola oil, chile-garlic sauce, sesame oil, raw sugar and minced garlic in a large mixing bowl, stirring until the mixture is uniform.
- Cut the broccoli crowns into long spears, preserving the stem length. Avoid cutting them too small to prevent burning. Place all the broccoli spears into the bowl with the oil mixture and toss to coat them thoroughly. Move the spears to the prepared pan, arranging them in one layer, and season with salt according to your preference.
- Place the pan in the oven and bake for 20-25 minutes. The broccoli is ready when the cut areas and florets show darkened, blackened edges. Take it from the oven and serve straight away alongside hot rice or with stir fried meats or tofu.
