Spicy Artichoke Dip
This creamy and piquant dip combines artichoke hearts with jalapeños and two types of cheese for a flavourful spread. It is quick to prepare, taking just 10 minutes, and yields about 2 cups, ideal for sharing. Adjust the spice level by varying the amount of jalapeño used. Serve it chilled with your choice of dippers.
Ingredients
- 1 (8 ounce) package cream cheese, softened
- 1 cup parmesan cheese, freshly grated
- 4 jalapenos, seeded, finely chopped
- 1 (6 ounce) jar marinated artichoke hearts, drained, reserve marinade
- 2 teaspoons Tabasco sauce, green jalapeno sauce
- kosher salt, to taste
- fresh ground pepper, to taste
Method
- Finely grate the Parmesan cheese using a food processor fitted with a metal blade.
- Incorporate the softened cream cheese and blend thoroughly.
- Move the combined cheese mixture into a separate mixing bowl.
- Place the seeded jalapeños in the processor to chop them, then add the drained artichoke hearts and pulse until coarsely chopped.
- Transfer the chopped artichoke and jalapeño mix, along with the jalapeño sauce, into the bowl with the cheese.
- Stir everything together until well combined.
- If the mixture seems too thick, stir in a little of the reserved artichoke marinade to reach your preferred consistency.
- Season with kosher salt and fresh ground pepper according to your taste.
- Place the dip in the refrigerator to chill before you plan to serve it.
- Offer it alongside an assortment of crackers or chips.
