Spicy Apricot Lamb Casserole
This hearty casserole combines cubes of lamb with diced vegetables in a rich sauce made from apricot nectar, salsa, and aromatic curry powder. The lamb is first browned before being slow-cooked in the oven with the other ingredients until everything is tender. It's a complete, flavourful meal that is traditionally served over a bed of rice. The recipe takes just over an hour and a half to prepare and cook.
Ingredients
- 500 g lean lamb leg steaks (or casserole lamb for slow cooking)
- 1/2 cup dried apricot (I left these out) (optional)
- 1/4 cup plain flour
- 1 cup onion, diced
- 1 cup carrot, sliced
- 1 cup celery, sliced
- 2 cups apricot nectar
- 2 teaspoons chicken stock powder
- 300 ml medium salsa
- 1 teaspoon curry powder
- 1 cup water
Method
- Heat your oven to 180C.
- Slice the lamb into cubes and halve the dried apricots if you are including them.
- Toss the lamb pieces in the plain flour, then brown them in an oiled non-stick pan to seal.
- Add all the other ingredients to a large, lidded casserole dish and mix them together.
- Cover the dish with its lid and bake for about 90 mins, or until the vegetables have softened to your preference.
- Accompany the finished casserole with rice.
