Spicy Applesauce Cake
This vegan dessert is a moist and flavourful cake made with applesauce and a blend of warming spices. It contains no eggs or dairy, and is studded with raisins and walnuts. After baking, it can be served plain, dusted with powdered sugar, or topped with a whipped alternative. The whole process takes just 35 minutes to complete.
Ingredients
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1 cup firmly packed brown sugar
- 1/2 cup oil
- 1 1/2 cups applesauce
- 1 cup raisins
- 1 cup chopped walnuts

Method
- Set your oven to heat to 375 degrees F.
- Prepare a 9-inch square pan by greasing it.
- Mix the flour, baking soda, cinnamon, nutmeg, and cloves together in a medium bowl.
- In a separate large bowl, use a mixer to beat the brown sugar and oil together until combined.
- Pour in the applesauce and mix thoroughly.
- Add the entire flour mixture to the wet ingredients and beat on a low setting.
- Continue mixing until the batter is fully combined.
- Fold the raisins and chopped walnuts into the batter.
- Transfer the batter into the greased pan.
- Place in the oven and bake for 20 to 25 minutes, until the top is lightly browned.
- Allow the cake to cool fully on a wire rack.
- Slice the cooled cake into squares.
- Enjoy plain, with a dusting of powdered sugar, or with whipped topping if you like.
