Spicy Apple Glazed Pork Loin

Ingredients

  • 3 lbs double boneless pork loin roast
  • 1 teaspoon dry mustard
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/2 cup apple cider or 1/2 cup apple juice
  • 1/4 cup lemon juice
  • 1/2 cup apple jelly
  • 2 tablespoons apple cider or 2 tablespoons white wine vinegar
  • 1 garlic clove, crushed
  • 1/4 teaspoon hot pepper flakes

Method

  1. Pat the pork loin dry thoroughly.
  2. Mix together the dry mustard, dried thyme and dried sage.
  3. Rub this seasoning blend all over the surface of the pork.
  4. Allow the seasoned pork to rest at room temperature for 30 minute.
  5. Combine the apple cider or juice with the lemon juice in a bowl.
  6. Place the pork on a greased grill over medium high heat.
  7. Sear the meat, turning it frequently, for 15 minute.
  8. Lower the grill heat to low.
  9. Close the lid and continue grilling, turning and basting often with the cider mixture, for about 1 1/2 to 2hrs or until a meat thermometer registers 160F.
  10. Take care not to overcook the pork.
  11. In the final 20-30 min, baste the pork several times using the Apple Glaze.
  12. Take the pork off the grill.
  13. Tent it with foil and let it stand for 10 minute before slicing.
  14. Offer the remaining glaze alongside the carved pork.
