Spicy Apple Glazed Pork Loin
This recipe creates a succulent pork loin roast with a fragrant herb rub and a sweet, spicy apple glaze. The pork is first seared on the grill and then cooked slowly, basting with a cider mixture. A final glaze application in the last stages of cooking adds a sticky, flavourful finish. The result is a tender roast ideal for carving and serving with the extra glaze. It serves 6 to 8 people and takes approximately 130 minutes to prepare and cook.
Ingredients
- 3 lbs double boneless pork loin roast
- 1 teaspoon dry mustard
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried sage
- 1/2 cup apple cider or 1/2 cup apple juice
- 1/4 cup lemon juice
- 1/2 cup apple jelly
- 2 tablespoons apple cider or 2 tablespoons white wine vinegar
- 1 garlic clove, crushed
- 1/4 teaspoon hot pepper flakes
Method
- Pat the pork loin dry thoroughly.
- Mix together the dry mustard, dried thyme and dried sage.
- Rub this seasoning blend all over the surface of the pork.
- Allow the seasoned pork to rest at room temperature for 30 minute.
- Combine the apple cider or juice with the lemon juice in a bowl.
- Place the pork on a greased grill over medium high heat.
- Sear the meat, turning it frequently, for 15 minute.
- Lower the grill heat to low.
- Close the lid and continue grilling, turning and basting often with the cider mixture, for about 1 1/2 to 2hrs or until a meat thermometer registers 160F.
- Take care not to overcook the pork.
- In the final 20-30 min, baste the pork several times using the Apple Glaze.
- Take the pork off the grill.
- Tent it with foil and let it stand for 10 minute before slicing.
- Offer the remaining glaze alongside the carved pork.
