Spicy Apple Crumble
This comforting British pudding is a lighter take on a classic dessert. Aromatic cardamom pods and fresh orange zest infuse the apple filling, which is then topped with a crunchy mixture of oats, almonds, sesame seeds and cinnamon. The whole dish bakes until golden and is delicious served with a dollop of vanilla yogurt, a scoop of ice cream or some warm custard. It's a satisfying treat that's surprisingly low in fat.
Ingredients
- 140g porridge oats
- 25g ground almonds
- 1 tbsp sesame seed
- 1 tsp ground cinnamon
- 50g butter
- 1 heaped tsp honey
- 800g apples (I usually use eating apples), peeled, cored and roughly chopped
- zest and juice 1 large orange
- 10 cardamom pods
- 1 tbsp brown sugar
Method
- Set your oven to 180C/160C fan/gas 4. Combine the porridge oats, ground almonds, sesame seed and ground cinnamon in a big bowl. Melt the butter with the honey in a small saucepan, then mix this into the dry ingredients until the texture resembles coarse breadcrumbs. using your hands can help here.
- Place the chopped apples, orange zest, orange juice and cardamom pods into a pan. Cook this for 10 mins until the fruit has softened. Remove the cardamom pods. Transfer the apple mixture to a baking dish, dust with the brown sugar and evenly cover with the prepared crumble topping. Bake for about 40 mins until the top is golden and crunchy. Enjoy with vanilla yogurt, ice cream or custard.
