Ingredients
- 6 (4 ounce) boneless, skinless chicken thighs
- salt and ground black pepper to taste
- 1 tablespoon extra-virgin olive oil
- 0.5 onion, sliced into rings
- 1.3333333730698 cups apple cider
- 1 tablespoon sambal oelek
- 1 teaspoon chopped fresh chives
Method
- Use a paper towel to dry the chicken thighs, then season them with salt and pepper.
- Warm the olive oil in a large skillet. Cook the chicken thighs for about 4 minutes until browned, then flip them and arrange the onion slices on top.
- Combine the apple cider and sambal oelek, then pour this mixture over the chicken and onions. Lower the heat and simmer for 10 to 15 minutes until the chicken is cooked through, reaching an internal temperature of at least 165 degrees F (74 degrees C). Move the chicken and onions to a plate and keep them warm.
- Turn the heat up and boil the liquid left in the skillet without a lid. Continue boiling until it reduces to approximately 3/4 cup. Drizzle this glaze over the chicken and onions, then scatter the fresh chives on top before serving.
