Spicy Apple Bran Muffins
These wholesome muffins combine all-bran cereal with grated apple, plump raisins and crunchy walnuts. Flavoured with cinnamon and nutmeg, they bake to a firm finish. This quick bread recipe yields approximately 12 to 24 muffins and takes around 40 minutes to prepare and bake.
Ingredients
- 4 eggs
- 1 1/2 cups milk
- 1 cup packed brown sugar
- 1/2 cup vegetable oil
- 2 teaspoons vanilla
- 3 cups all-bran cereal
- 2 cups grated peeled apples
- 1 cup raisins
- 1 cup chopped walnuts
- 3 cups all-purpose flour
- 2 tablespoons baking powder (the amount is correct)
- 2 teaspoons baking soda
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon salt
Method
- Set your oven to 375° and grease your muffin tin.
- Beat the eggs in a bowl, then pour in the milk, brown sugar, oil and vanilla, blending thoroughly.
- Mix in the bran cereal, grated apples, raisins and chopped walnuts, stirring well.
- Take a separate bowl and combine the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
- Pour the wet bran mixture into the dry flour mixture, stirring only until just combined.
- Evenly divide the batter by spooning it into the prepared muffin pans.
- Bake at 375° for 20 minutes or until the tops feel firm when touched.
