These wholesome muffins combine all-bran cereal with grated apple, plump raisins and crunchy walnuts. Flavoured with cinnamon and nutmeg, they bake to a firm finish. This quick bread recipe yields approximately 12 to 24 muffins and takes around 40 minutes to prepare and bake.

Spicy Apple Bran Muffins

Ingredients

  • 4 eggs
  • 1 1/2 cups milk
  • 1 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla
  • 3 cups all-bran cereal
  • 2 cups grated peeled apples
  • 1 cup raisins
  • 1 cup chopped walnuts
  • 3 cups all-purpose flour
  • 2 tablespoons baking powder (the amount is correct)
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt

Method

  1. Set your oven to 375° and grease your muffin tin.
  2. Beat the eggs in a bowl, then pour in the milk, brown sugar, oil and vanilla, blending thoroughly.
  3. Mix in the bran cereal, grated apples, raisins and chopped walnuts, stirring well.
  4. Take a separate bowl and combine the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
  5. Pour the wet bran mixture into the dry flour mixture, stirring only until just combined.
  6. Evenly divide the batter by spooning it into the prepared muffin pans.
  7. Bake at 375° for 20 minutes or until the tops feel firm when touched.
