Spicy and Sour Fish Marinade
This marinade delivers a tangy flavour with a lingering spicy finish, ideal for fish like tilapia or ahi tuna. Its texture should be slightly thick from the dried oregano. For the best results, marinate the fish for at least four hours to allow the flavours to penetrate fully. Any leftover mixture can be used as a sauce after cooking. The quantities provided are sufficient for two medium pieces of fish.
Ingredients
- 2 1/2 tablespoons lime juice
- 1 tablespoon extra virgin olive oil
- 1 tablespoon dried oregano
- 1/2 teaspoon garlic, minced
- 1 1/2 teaspoons chili powder
- 1/4 teaspoon fresh cracked pepper
- 1 1/4 teaspoons Tabasco sauce
- 1 dash seasoning salt
Method
- Combine every ingredient in a small bowl using a fork. You can adjust the heat by adding more Tabasco sauce or chilli powder according to your preference.
- Put your fish pieces into a zip-top bag that fits them snugly, leaving as little empty space as possible.
- Spoon the prepared marinade into the bag over the fish, ensuring all pieces are coated. Seal the bag shut.
- Gently massage the bag to spread the marinade and cover the fish entirely.
- Refrigerate the bagged fish for a minimum of 4 hours.
