This robust Mexican dish combines long-grain rice with seasoned ground beef, creating a satisfying main or accompaniment. Diced green pepper and onion add texture, while tomato sauce and spicy diced tomatoes with green chilies provide a rich, piquant flavour base. The rice is toasted in butter before simmering with the other ingredients until tender and the liquid is fully absorbed. It yields 8 generous portions and requires about 50 minutes to prepare from start to finish.

Spicy American Spanish Rice

Ingredients

  • 3 tablespoons butter
  • 1 cup long-grain converted rice
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 1 pound ground beef
  • 2 (15 ounce) cans tomato sauce
  • 1 (14.5 ounce) can diced tomatoes with green chilies (such as RO*TEL®)

Method

  1. Place the butter in a skillet to melt. Add the rice and cook it, stirring, for 3 to 4 minutes until it takes on a light golden colour. Mix in the diced bell pepper and onion, continuing to cook for 5 to 8 minutes until the pepper softens and the onion turns translucent.
  2. Crumble the ground beef into the skillet with the rice mixture. Cook while stirring for 8 to 10 minutes until the beef is thoroughly browned. Pour in the tomato sauce and the can of diced tomatoes with green chilies. Put a lid on the skillet, lower the heat, and let it simmer for about 20 minutes until the rice is cooked through and has absorbed all the liquid.
