Spicy Almond Chicken
This American dinner dish features chicken pieces baked in a distinctive sweet and savoury sauce. Ingredients
- 3 tablespoons butter
- 1 (3 pound) chicken, cut into pieces
- 1 (14 ounce) jar red currant jelly
- 0.5 cup yellow mustard
- 0.5 cup blanched slivered almonds
- 3 tablespoons brown sugar
- 2 tablespoons lemon juice
- 0.5 teaspoon ground cinnamon
Method
- Melt 3 tablespoons of butter in a large skillet. Add the chicken pieces and cook for about 10 minutes until browned on all sides. Transfer the chicken to a 9x13 inch baking dish.
- Set your oven to 350 degrees F (175 degrees C) to preheat.
- In the same skillet, combine the red currant jelly, yellow mustard, blanched slivered almonds, brown sugar, lemon juice and ground cinnamon. Cook this mixture, stirring continuously, until the jelly has fully melted. Pour the finished sauce over the chicken in the dish.
- Cover the baking dish and place it in the preheated oven for 30 minutes. After this time, uncover the dish and continue baking for an additional 10 minutes, or until the chicken is thoroughly cooked and no longer pink inside.
