Spicy 3 Pepper Potatoes

Ingredients

  • 5 russet potatoes
  • 1/2 white onion, diced
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/2 serrano peppers or 1/2 jalapeno pepper, finely chopped
  • canola oil
  • salt
  • course ground pepper

Method

  1. Prepare all vegetables by chopping them and setting them to one side.
  2. Warm a non-stick skillet with a little oil on med/high heat. Once hot, cook the onion until it softens.
  3. Introduce the remaining peppers to the pan, saute them, and season the vegetables with salt.
  4. Mix in the potatoes with the peppers. Season the potatoes lightly with salt. Reduce the heat to med/low. Stir now and then, being careful not to stir too much to avoid the potatoes turning mushy as they cook.
  5. The flavours will blend together as everything cooks. When the potatoes are tender and nearly ready to serve, check the seasoning and add course pepper and extra salt if you like.
  6. Increase the heat and pour in a bit more oil if the pan looks dry. This step creates a pleasing golden finish on the potatoes.
