Spiceless Chili
This is a wonderfully mild chilli created for those who dislike spicy heat. It is a simple, forgiving recipe where you layer raw lean beef, onions, tomatoes and beans in a slow cooker. The long, slow cook yields a hearty dish that is full of fibre and low in fat. It tastes even better the next day and is perfect for freezing. Feel free to use any beans you have to hand.
Ingredients
- 1 lb 93% lean ground beef
- 3 medium onions, chopped
- 5 (14 1/2 ounce) cans beans, drained
- 2 (14 1/2 ounce) cans diced tomatoes, undrained
Method
- In your 3-quart slow cooker, begin creating layers with the chopped onions, crumbled raw lean ground beef, undrained diced tomatoes and drained beans.
- You may add an optional can of corn or RoTel at this stage if you wish.
- Place the lid on the slow cooker and set it to cook on low for about 8 hours.
- For the best flavour, allow the chilli to rest and serve it the following day, ideally with tortilla chips.
