Spiced Zucchini Muffins

Ingredients

  • 3 eggs
  • 1/2 cup oil
  • 1 cup sugar
  • 1/2 cup sour cream
  • 1 1/2 cups zucchini, grated
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons cinnamon (use fresh if possible)
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup dried fruit (raisins, cranberries, cherries) (optional)
  • 1/2 cup walnuts, chopped (optional)

Method

  1. Heat your oven to 350F.
  2. Prepare your muffin tins by greasing them and lining with paper cases.
  3. In a large mixing bowl, combine the eggs, oil, sugar, sour cream, and grated zucchini.
  4. Stir these wet ingredients just until they are incorporated.
  5. Introduce the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and the optional dried fruit and walnuts.
  6. It is advisable to sift the dry ingredients together first. Fold everything together until the batter is just combined, being careful not to overmix.
