- 1 cup vegetable oil

- 1 teaspoon vanilla extract
- 2 cups grated zucchini

- 0.5 teaspoon salt
- 0.5 teaspoon ground cloves

- 1 cup chopped walnuts

Method
- Set your oven to 325 degrees F (165 degrees C). Prepare two 8x5-inch loaf pans by spraying them with cooking spray.
- In a large mixing bowl, mix together the white sugar, vegetable oil, eggs and vanilla extract. Gently stir the grated zucchini into this wet mixture.
- Sift the all-purpose flour, ground ginger, baking soda, salt, ground cloves and baking powder into a separate large bowl. Combine this dry mixture with the zucchini batter.
- Add the chopped walnuts and raisins to the batter, folding them in. Evenly distribute the batter between the two prepared loaf pans.
- Place the pans in the preheated oven and bake for about 1 hour, or until a toothpick inserted into the centre emerges clean. Allow the loaves to cool in the pans for 10 minutes before transferring them to a wire rack.
