  • 3 tablespoons honey
  • 1/4 cup chopped walnuts or 1/4 cup pecans
  • 1/2 cup honey
  • 1/4-1/2 teaspoon ground cinnamon
  • 1 tablespoon butter

Method

  1. Begin by making the topping. Place the honey and cinnamon in a small saucepan over low heat and stir for 1 minute.
  2. Stir in the butter until it has fully melted, then set the mixture aside to keep warm.
  3. For the pancake batter, mix the whole wheat flour, baking powder, ground coriander, ground cinnamon, ground nutmeg, and salt in a large bowl.
  4. In a separate bowl, whisk together the eggs, milk, vegetable oil, and 3 tablespoons of honey until combined.
  5. Pour the wet ingredients into the dry ingredients and stir until well incorporated.
  6. Gently fold the chopped walnuts or pecans into the batter.
  7. Place a nonstick griddle or skillet on the heat.
  8. Lightly coat the cooking surface with a brush of vegetable oil.
  9. For each pancake, pour approximately 1/4 cup of the batter onto the hot griddle.
  10. Cook until bubbles appear across the surface, then flip and cook the other side until it turns a golden colour. Serve the pancakes warm with the prepared honey-cinnamon topping.
