Spiced Whole Wheat Pancakes

Ingredients
- 2 cups whole wheat flour
- 1 tablespoon baking powder
- 1 teaspoon ground coriander

- 3 large eggs
- 2 cups milk
- 1/4 cup vegetable oil
- 3 tablespoons honey
- 1/4 cup chopped walnuts or 1/4 cup pecans
- 1/2 cup honey
- 1/4-1/2 teaspoon ground cinnamon
- 1 tablespoon butter
Method
- Begin by making the topping. Place the honey and cinnamon in a small saucepan over low heat and stir for 1 minute.
- Stir in the butter until it has fully melted, then set the mixture aside to keep warm.
- For the pancake batter, mix the whole wheat flour, baking powder, ground coriander, ground cinnamon, ground nutmeg, and salt in a large bowl.
- In a separate bowl, whisk together the eggs, milk, vegetable oil, and 3 tablespoons of honey until combined.
- Pour the wet ingredients into the dry ingredients and stir until well incorporated.
- Gently fold the chopped walnuts or pecans into the batter.
- Place a nonstick griddle or skillet on the heat.
- Lightly coat the cooking surface with a brush of vegetable oil.
- For each pancake, pour approximately 1/4 cup of the batter onto the hot griddle.
- Cook until bubbles appear across the surface, then flip and cook the other side until it turns a golden colour. Serve the pancakes warm with the prepared honey-cinnamon topping.
