Spiced Wassail
This recipe is a traditional winter holiday beverage. It is a spiced punch made by simmering apple cider and cranberry juice with oranges, sugar, and a blend of whole spices including cinnamon, cloves, and allspice. Orange bitters and rum extract are added for flavour. The mixture is heated for 10 minutes before serving warm, with the oranges left to float on top. The recipe yields approximately 2 quarts.
Ingredients
- 6 inches cinnamon sticks
- 40 whole cloves
- 1 teaspoon whole allspice
- 6 cups apple cider
- 2 cups cranberry juice
- 1/4 cup granulated sugar
- 1 teaspoon orange bitters
- 3 medium oranges
- 2 tablespoons rum extract
Method
- Break the cinnamon sticks into pieces and place them in a cheesecloth bag with the whole cloves and whole allspice, then tie it securely.
- Halve each of the oranges.
- Place the apple cider, cranberry juice, sugar, and orange bitters into a large saucepan with a lid.
- Add the spice bag, the halved oranges, and the rum extract to the saucepan. Cover and simmer the mixture for 10 minutes.
- Take out the spice bag. Pour the wassail into a warm serving bowl, allowing the orange halves to remain floating on the surface.
