Spiced Venison Roast
This recipe produces a tender and aromatic venison roast. The meat is first browned, then cooked slowly in a spiced sauce made with tomato juice, onions, cinnamon, ginger and bay leaves. The process takes just over three hours, resulting in a richly flavoured main course that serves eight people.
Ingredients
- 5 lbs venison roast
- 1 tablespoon bacon fat
- 1 tablespoon cinnamon
- 1 tablespoon ginger
- 2 tablespoons sugar
- 2 bay leaves
- 1 teaspoon salt
- 1 tablespoon vinegar
- 2 cups tomato juice
- 2 onions, chopped
- 1/2 teaspoon pepper
Method
- Brown the venison roast on every side using the bacon fat in a roasting pan.
- Combine all the other listed ingredients in a bowl and mix them thoroughly.
- Pour the mixed sauce over the browned roast in the pan.
- Place the roast in an oven preheated to 350 degrees Fahrenheit and cook for 3 hours.
