This colourful traybake transforms a mix of vegetables into a delicious vegan side. Cauliflower, aubergine, sweet potato, peppers and red onion are tossed with cumin seeds and turmeric, then roasted until tender. It's a simple, healthy dish packed with flavour, perfect for using up any vegetables you have to hand. The recipe serves four and takes just under an hour to prepare and cook.

Spiced Vegetable Traybake

Ingredients

  • 1 small cauliflower cut into 3cm chunks
  • 1 aubergine cut into 3cm chunks
  • 1 sweet potato (around 200g), cut into chips
  • 1 red pepper cut into 3cm chunks
  • 1 yellow pepper cut into 3cm chunks
  • 1 red onion sliced
  • 2 tsp cumin seeds
  • 2 tsp ground turmeric
  • 3 tbsp rapeseed oil

Method

  1. Preheat your oven to 200C/180C fan/gas 6. Place all the prepared vegetables into a large roasting tin, then scatter over the cumin seeds and turmeric. Pour the oil over everything and season well with salt. Use your hands to toss and coat everything evenly.
  2. Cook in the oven for 30-40 mins. Remember to give the vegetables a good stir around the 20-minute mark. They are ready when all the pieces are tender and cooked through.
