Spiced Vegetable Traybake
This colourful traybake transforms a mix of vegetables into a delicious vegan side. Cauliflower, aubergine, sweet potato, peppers and red onion are tossed with cumin seeds and turmeric, then roasted until tender. It's a simple, healthy dish packed with flavour, perfect for using up any vegetables you have to hand. The recipe serves four and takes just under an hour to prepare and cook.
Ingredients
- 1 small cauliflower cut into 3cm chunks
- 1 aubergine cut into 3cm chunks
- 1 sweet potato (around 200g), cut into chips
- 1 red pepper cut into 3cm chunks
- 1 yellow pepper cut into 3cm chunks
- 1 red onion sliced
- 2 tsp cumin seeds
- 2 tsp ground turmeric
- 3 tbsp rapeseed oil
Method
- Preheat your oven to 200C/180C fan/gas 6. Place all the prepared vegetables into a large roasting tin, then scatter over the cumin seeds and turmeric. Pour the oil over everything and season well with salt. Use your hands to toss and coat everything evenly.
- Cook in the oven for 30-40 mins. Remember to give the vegetables a good stir around the 20-minute mark. They are ready when all the pieces are tender and cooked through.
