Spiced Vegetable Couscous
This one pot spiced vegetable couscous is a quick and flavourful meal. It combines chickpeas, finely chopped carrot and zucchini with green onions, paprika and a hint of chilli. The couscous is cooked directly in the vegetable stock with raisins added for sweetness, creating a complete dish in about 15 minutes. It's a wonderful blend of textures and tastes that makes for a simple, satisfying lunch or dinner.
Ingredients
- 1/2 cup canned chick-peas, rinsed
- 1/2 cup finely chopped carrot
- 1/2 cup finely chopped zucchini
- 1/2 cup chopped green onion
- 2 tablespoons olive oil
- 1 1/2 cups vegetable stock or 1 1/2 cups water
- 2 tablespoons chopped parsley
- 1 teaspoon paprika
- 1/4 teaspoon chili flakes
- salt
- 1 cup couscous
- 1/2 cup raisins
Method
- In a pot, mix together the rinsed chickpeas, chopped carrot, zucchini, green onion and olive oil.
- Pour in the vegetable stock or water, then add the chopped parsley, paprika, chilli flakes and salt according to your taste.
- Place the pot on the heat and bring the mixture up to a boil.
- Once boiling, scatter the couscous evenly over the surface of the liquid.
- Give everything a good stir, then mix in the raisins.
- Put the lid on the pot, take it off the heat and leave it to stand for 5 minutes.
- Remove the lid and give the couscous a final stir before serving.
