Spiced Turkey Patties with Fruity Quinoa Salad
This Middle Eastern main course combines lean turkey patties spiced with toasted coriander and cumin seeds. They are served atop a colourful salad of quinoa, roasted carrot and onion batons, fresh pomegranate seeds, orange segments and chopped parsley. A simple, spiced garlic yogurt sauce completes the dish. It serves four people and takes about 50 minutes to prepare and cook.
Ingredients
- 4 carrots peeled and cut into thin batons
- 3 red onions 21/2 cut into chunky wedges (roots intact) and 1/2 grated
- 2 tbsp olive oil
- 200g quinoa
- 2 tsp coriander seed
- 2 tsp cumin seed
- 400g turkey mince
- 25g fresh wholemeal breadcrumb
- 3 garlic cloves crushed
- 4 tbsp 0% fat Greek yogurt
- few dashes of Tabasco sauce
- 1 pomegranate deseeded over a bowl to catch the juices
- 2 oranges segmented
- large pack parsley roughly chopped
Method
- Set your oven to 220C/200C fan/gas 7. Place the carrot batons and onion wedges into a roasting tin. Coat them with 1 tbsp of the olive oil, season, and roast for 30 mins, giving them a stir once, until they are tender.
- While the vegetables roast, prepare the quinoa according to the packet directions. Drain it and set it aside. Warm a large non-stick frying pan and toast the coriander and cumin seeds for 1-2 mins until fragrant. Transfer them to a pestle and mortar, grind them, and then tip into a large mixing bowl. To the bowl, add the turkey mince, grated onion, breadcrumbs, most of the crushed garlic and seasoning. Mix well and form into 12 small patties. Heat the rest of the oil in the same pan and fry the patties for 3-4 mins on each side until browned and cooked through.
- For the sauce, combine the yogurt, the remaining garlic, Tabasco, 1 tbsp of water and seasoning in a small bowl. In a large serving bowl, toss together the drained quinoa, pomegranate seeds and their juice, orange segments, chopped parsley and the roasted vegetables, seasoning to taste. Serve the quinoa salad with the warm turkey patties and the spiced yogurt sauce.
