Spiced Tomato Rice
This simple British side dish elevates plain rice with a few storecupboard staples. Long-grain rice is simmered in a mixture of vegetable stock and passata, then infused with ground cumin and mild chilli powder. Finished with fresh flat-leaf parsley, it creates a vibrant and aromatic accompaniment perfect for dinner. The entire process takes only about 30 minutes to complete, making it an ideal last-minute addition to any meal.
Ingredients
- 350g long-grain rice
- 500ml vegetable stock
- 200ml passata
- 1 tsp ground cumin
- 1 tsp mild chilli powder
- handful flat-leaf parsley
Method
- 1. Combine the rice, stock and passata in a saucepan. Bring the mixture to a boil, then cover and let it simmer for 10-12 mins. 2. Remove the pan from the heat and stir through the cumin and chilli powder. Cover the pan again and allow it to rest for 5 mins more. 3. Use a fork to fluff the cooked rice and serve it with a scattering of parsley.
