This aromatic Moroccan style sauce is a versatile condiment. It combines tomatoes with a warm spice blend of cumin, paprika, cinnamon and ginger, simmered until rich. The result is a smooth, slightly sweet and spiced dip that complements grilled chicken, shrimp or steak beautifully. It also pairs well with various frozen appetisers. Spiced Tomato Dipping Sauce - Moroccan Style

Ingredients

  • 1/3 cup onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 1/2 teaspoons fresh ginger, peeled and finely chopped
  • 3/4 teaspoon cumin
  • 1/2 teaspoon hot paprika
  • 1/4 teaspoon cinnamon
  • 1 pinch cayenne
  • 1 pinch ground cloves
  • 1 tablespoon olive oil
  • 1 1/2 tablespoons cider vinegar
  • 1 (15 ounce) can tomatoes, coarsely chopped (reserve juice)
  • 2 tablespoons brown sugar

Method

  1. Cook the onion, garlic, ginger and spices in the olive oil in a large saucepan.
  2. Continue to cook, stirring often, until the onion has softened, for about 4 minutes.
  3. Pour in the cider vinegar and let the mixture simmer for about 1 minute.
  4. Introduce the canned tomatoes along with their juice and the brown sugar.
  5. Turn the heat up a little and simmer the sauce, stirring now and then, until it thickens slightly, for about 30 minutes.
  6. Allow the sauce to cool for a short while.
  7. Transfer the sauce to a blender or food processor and blend it until completely smooth.
  8. Take care when processing hot liquids.
  9. This sauce is best served at room temperature or just slightly warm.
