Spiced Tomato Dipping Sauce - Moroccan Style
This aromatic Moroccan style sauce is a versatile condiment. It combines tomatoes with a warm spice blend of cumin, paprika, cinnamon and ginger, simmered until rich. The result is a smooth, slightly sweet and spiced dip that complements grilled chicken, shrimp or steak beautifully. It also pairs well with various frozen appetisers. The recipe yields approximately 1 1/2 cups.
Ingredients
- 1/3 cup onion, finely chopped
- 1 clove garlic, finely chopped
- 1 1/2 teaspoons fresh ginger, peeled and finely chopped
- 3/4 teaspoon cumin
- 1/2 teaspoon hot paprika
- 1/4 teaspoon cinnamon
- 1 pinch cayenne
- 1 pinch ground cloves
- 1 tablespoon olive oil
- 1 1/2 tablespoons cider vinegar
- 1 (15 ounce) can tomatoes, coarsely chopped (reserve juice)
- 2 tablespoons brown sugar
Method
- Cook the onion, garlic, ginger and spices in the olive oil in a large saucepan.
- Continue to cook, stirring often, until the onion has softened, for about 4 minutes.
- Pour in the cider vinegar and let the mixture simmer for about 1 minute.
- Introduce the canned tomatoes along with their juice and the brown sugar.
- Turn the heat up a little and simmer the sauce, stirring now and then, until it thickens slightly, for about 30 minutes.
- Allow the sauce to cool for a short while.
- Transfer the sauce to a blender or food processor and blend it until completely smooth.
- Take care when processing hot liquids.
- This sauce is best served at room temperature or just slightly warm.
