Spiced Sweet Roasted Red Pepper Hummus
This Greek appetiser or snack combines sweet roasted red peppers with a blend of warming spices for a flavourful hummus. The method is straightforward, requiring you to blend all the main ingredients until smooth before chilling the mixture. After resting in the refrigerator, it is brought back to room temperature and finished with a fresh herb garnish. The recipe serves 8 and takes about 95 minutes to prepare, including chilling time.
Ingredients
- 1 (15 ounce) can garbanzo beans, drained
- 1 (4 ounce) jar roasted red peppers
- 3 tablespoons lemon juice
- 1.5 tablespoons tahini
- 1 clove garlic, minced
- 0.5 teaspoon ground cumin
- 0.5 teaspoon cayenne pepper
- 0.25 teaspoon salt
- 1 tablespoon chopped fresh parsley
Method
- Purée the drained garbanzo beans, roasted red peppers, lemon juice, tahini, minced garlic, ground cumin, cayenne pepper, and salt in a food processor or blender. Process with long pulses until the texture is fairly smooth and becomes slightly fluffy, pausing to scrape down the sides as needed. Place the mixture into a serving bowl and refrigerate it for at least 1 hour or for up to 3 days.
- Allow the hummus to come back to room temperature. Just before you are ready to serve, scatter the chopped fresh parsley over the top.
