Spiced Sweet Potatoes and Cranberries
This dish brings together two classic holiday flavours in one simple bake. Sweet potato chunks and fresh cranberries are tossed in a spiced glaze of orange marmalade, apple juice, brown sugar and aromatic spices, then roasted until tender. Finished with chopped pecans, it creates a vibrant and flavourful side perfect for a festive dinner or Thanksgiving spread. The recipe yields 6 cups, serving approximately 12 people.
Ingredients
- 2 tablespoons Mazola® Corn Oil
- 0.75 cup orange marmalade
- 0.75 cup apple juice
- 0.5 cup brown sugar
- 0.33333334326744 cup raisins
- 1 tablespoon Spice Islands® Pumpkin Pie Spice
- 1 teaspoon Spice Islands® Curry Powder
- 3 large sweet potatoes, peeled, cut into 1-inch chunks
- 12 ounces fresh cranberries
- 0.25 cup finely chopped pecans
Method
- Set your oven to 375 degrees F. Prepare a rimmed 15 x 10-inch baking pan by spraying it with cooking spray. In a large bowl, whisk together the corn oil, orange marmalade, apple juice, brown sugar, raisins, pumpkin pie spice and curry powder. Toss the peeled sweet potato chunks, fresh cranberries and chopped pecans in this mixture until evenly coated. Transfer everything to the prepared pan.
- Place the pan in the oven and bake for 50 to 60 minutes, giving it a stir now and then. It is ready when the sweet potatoes and cranberries have softened. Transfer the contents to a serving bowl and enjoy while hot.
