These sweet potato fries are seasoned with a fragrant blend of crushed coriander and fennel seeds, oregano, brown sugar, pepper and salt. The wedges are tossed in olive oil and roasted until tender and golden. While they don't become completely crisp, they offer a wonderfully spiced and slightly sweet flavour. They are an excellent side dish, perfect for sharing.

Spiced Sweet Potato Fries

Ingredients

  • 1 teaspoon coriander seed, crushed
  • 1/2 teaspoon fennel seed, crushed
  • 1/2 teaspoon dried oregano
  • 2 tablespoons light brown sugar
  • 1/2 teaspoon pepper
  • 1 teaspoon kosher salt
  • 2 lbs medium sweet potatoes (peeled and cut into strips or wedges)
  • 3 -4 tablespoons olive oil
  • nonstick cooking spray

Method

  1. Set your oven to heat to 450 degrees. Prepare a baking sheet by coating it with nonstick cooking spray.
  2. Combine the crushed coriander seeds, fennel seeds, oregano, light brown sugar, pepper and kosher salt in a bowl. Set this spice mixture aside. In a separate medium bowl, add the sweet potato strips and drizzle them with olive oil, tossing to coat evenly. Scatter the seasoning mix over the potatoes.
  3. Arrange the seasoned potato wedges in a single layer on the prepared baking sheet, ensuring they are not touching. Roast them on the middle oven rack for 15 minutes. Use a spatula to carefully turn each wedge over. Continue roasting for about 15 minutes more, until the potatoes are tender and have developed a light golden colour.
