Spiced Sweet Potato Dahl

Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon butter, or to taste
  • 1 red onion, chopped
  • 2 tablespoons dukka
  • 1 tablespoon garam masala
  • 1 clove garlic, crushed
  • 2 large sweet potatoes, peeled and cut into chunks
  • 5.75 cups vegetable broth
  • 1.5 cups red lentils
  • 1 small bunch fresh cilantro, chopped
  • 3.5 ounces baby spinach leaves
  • ground black pepper to taste

Method

  1. Warm the olive oil and butter in a large pot. Cook the chopped red onion with the dukka, garam masala, and crushed garlic, stirring until the onion softens, about 5 minutes. Mix in the sweet potato chunks and cook for 3 to 5 minutes until they begin to colour lightly.
  2. Add the vegetable broth to the pot, then stir through the red lentils and chopped coriander. Simmer with the lid partially on until the lentils become tender, 20 to 25 minutes. Stir in the baby spinach leaves and continue to simmer for about 5 minutes more until they wilt. Finish by seasoning the dahl with ground black pepper to your taste.
